Black Rice with Tofu and Indonesian Styled Curry

Black Rice with Vegetables, Tofu and Indonesian Styled Curry
Black rice, rich in texture and flavor,  is a little more exotic than your plain white rice.   Here is a coconut curry recipe that works great with the black rice.

Coconut Curry Ingredients:

1 can coconut milk
1 bunch scallions
1 red pepper, sliced thin
2 plum tomatoes
1 pound of tofu, cut in small cubes
1 stalk lemon grass,  finely chopped
1/2 cup shitake mushrooms
1 tablespoon ginger, grated
2 cloves garlic, finely diced
1/4 cup cilantro
1 teaspoon turmeric
1 teaspoon cumin
1 teaspoon coriander, ground
1 teaspoon soy sauce
1 teaspoon fish sauce
1 tablespoon sesame oil

Directions:

1.  In a sauce pan add coconut milk, tomatoes, lemon grass, ginger, cilantro, turmeric, cumin, coriander, soy and fish sauce then bring to boil, then simmer. 
2.  In a skillet, heat the sesame oil, then brown the scallions,  mushrooms, red peppers, garlic and tofu. 
3.  Combine the ingredients with the coconut milk mixture.
4.  Serve on a bowl of black rice.
